Description

A cozy and flavorful vegan pizza featuring caramelized mushrooms and a savory garlic white sauce, perfect for any gathering.


Ingredients

Scale
  • 2 tbsp olive oil
  • 4 oz shiitake mushrooms, stems trimmed and thinly sliced
  • 8 oz cremini mushrooms, stems trimmed and thinly sliced
  • 1/2 large sweet onion, diced
  • 4 cloves garlic, minced
  • 1/2 tsp salt, more to taste
  • Freshly ground black pepper, to taste
  • Pizza Dough
  • Vegan Garlic White Sauce
  • Vegan mozzarella
  • Fresh rosemary, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the shiitake and cremini mushrooms along with the diced onion and minced garlic. Sauté until all the moisture has evaporated, about 7-10 minutes.
  3. Sprinkle in the salt and cook for an additional 2-4 minutes, or until the mixture thickens and begins to stick to the skillet. Turn off the heat and set aside.
  4. One hour before baking, preheat your oven to 550 ºF (or the highest it will go), and place a baking steel or stone on a rack one-third down from the top.
  5. Take your pizza dough out of the fridge to reach room temperature.
  6. Stretch your dough to a 10-12” diameter and place it on a lightly floured pizza peel.
  7. Spread a layer of vegan garlic white sauce over the stretched dough, then top with the caramelized mushroom mixture, vegan mozzarella, and fresh rosemary.
  8. Transfer the assembled pizza onto the baking surface and bake for about 8 minutes, broiling for another 1-2 minutes if necessary.
  9. Let the pizza cool for a couple of minutes before cutting and serving hot.

Notes

This pizza is great for gatherings and can be paired with a simple green salad. For leftovers, store in an airtight container and reheat for best results.
