A cozy and flavorful vegan pizza featuring caramelized mushrooms and a savory garlic white sauce, perfect for any gathering.

- 2 tbsp olive oil
- 4 oz shiitake mushrooms, stems trimmed and thinly sliced
- 8 oz cremini mushrooms, stems trimmed and thinly sliced
- 1/2 large sweet onion, diced
- 4 cloves garlic, minced
- 1/2 tsp salt, more to taste
- Freshly ground black pepper, to taste
- Pizza Dough
- Vegan Garlic White Sauce
- Vegan mozzarella
- Fresh rosemary, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the shiitake and cremini mushrooms along with the diced onion and minced garlic. Sauté until all the moisture has evaporated, about 7-10 minutes.
- Sprinkle in the salt and cook for an additional 2-4 minutes, or until the mixture thickens and begins to stick to the skillet. Turn off the heat and set aside.
- One hour before baking, preheat your oven to 550 ºF (or the highest it will go), and place a baking steel or stone on a rack one-third down from the top.
- Take your pizza dough out of the fridge to reach room temperature.
- Stretch your dough to a 10-12” diameter and place it on a lightly floured pizza peel.
- Spread a layer of vegan garlic white sauce over the stretched dough, then top with the caramelized mushroom mixture, vegan mozzarella, and fresh rosemary.
- Transfer the assembled pizza onto the baking surface and bake for about 8 minutes, broiling for another 1-2 minutes if necessary.
- Let the pizza cool for a couple of minutes before cutting and serving hot.
Notes
This pizza is great for gatherings and can be paired with a simple green salad. For leftovers, store in an airtight container and reheat for best results.
