Description

A hearty and flavorful Tuscan white bean soup with Italian sausage, vegetables, and fresh spinach, perfect for chilly evenings.


Ingredients

Scale
  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add the Italian sausage and cook until browned, about 5-7 minutes.
  3. Remove the sausage and set it aside.
  4. Add onion, carrots, and celery to the pot, cooking until softened, about 5-6 minutes.
  5. Stir in the garlic and cook for another minute until fragrant.
  6. Return the sausage to the pot and add the vegetable broth, white beans, thyme, oregano, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  8. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  9. Adjust seasoning to taste and serve hot.

Notes

Best eaten fresh, but flavors deepen overnight. Store without spinach and add fresh spinach when reheating.
