A hearty and flavorful Tuscan white bean soup with Italian sausage, vegetables, and fresh spinach, perfect for chilly evenings.

- 1 pound Italian sausage
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups fresh spinach
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add the Italian sausage and cook until browned, about 5-7 minutes.
- Remove the sausage and set it aside.
- Add onion, carrots, and celery to the pot, cooking until softened, about 5-6 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Return the sausage to the pot and add the vegetable broth, white beans, thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Stir in fresh spinach and cook until wilted, about 2-3 minutes.
- Adjust seasoning to taste and serve hot.
Notes
Best eaten fresh, but flavors deepen overnight. Store without spinach and add fresh spinach when reheating.
