Description

A quick and delicious Tuscan dish featuring white beans, fresh spinach, and sun-dried tomatoes sautéed in butter.


Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Parmesan cheese for serving (optional)

Instructions

  1. Melt the butter over medium heat until bubbly.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
  4. Add the white beans, spinach, Italian seasoning, salt, and pepper.
  5. Simmer the mixture for 5-7 minutes, until the spinach wilts and everything is heated through.
  6. Serve warm, topped with Parmesan cheese if desired.

Notes

Best eaten fresh the same day; spinach may wilt if stored. Keep an eye on the garlic to avoid burning.
