A quick and delicious Tuscan dish featuring white beans, fresh spinach, and sun-dried tomatoes sautéed in butter.

- 1 can (15 oz) white beans, drained and rinsed
- 2 cups fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 3 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Parmesan cheese for serving (optional)
Instructions
- Melt the butter over medium heat until bubbly.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
- Add the white beans, spinach, Italian seasoning, salt, and pepper.
- Simmer the mixture for 5-7 minutes, until the spinach wilts and everything is heated through.
- Serve warm, topped with Parmesan cheese if desired.
Notes
Best eaten fresh the same day; spinach may wilt if stored. Keep an eye on the garlic to avoid burning.
