Instructions

  1. 1. Roast, peel, seed, and chop red bell peppers. If using jarred, drain them.
  2. 2. Heat 1/4 cup olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 6-8 minutes.
  3. 3. Stir in minced garlic and cook for 1 minute until fragrant. Add oregano and red pepper flakes (if using) and cook for 30 seconds.
  4. 4. Add chopped roasted red peppers and undrained diced tomatoes to the skillet. Simmer for 10-15 minutes, allowing the sauce to thicken. Season with salt and pepper.
  5. 5. While the sauce simmers, pat tilapia fillets dry and season with salt and pepper.
  6. 6. In a separate skillet, heat 1-2 tablespoons of olive oil over medium-high heat. Sear tilapia fillets for 2-3 minutes per side until golden brown and cooked through.
