Ingredients

  • 1 cup fresh strawberries, hulled and quartered or sliced
  • 1/2 cup red grapes, halved
  • 1/4 cup slivered almonds, toasted (optional)
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • A pinch of sugar (optional)
  • Fresh mint or basil, chopped (for garnish, optional)

Instructions

  1. 1. Prepare the chicken by shredding or dicing cooked chicken.
  2. 2. Prep the produce: Hull and quarter/slice strawberries, halve grapes, finely chop celery and red onion.
  3. 3. Toast slivered almonds in a dry skillet until golden brown, then cool.
  4. 4. Whisk mayonnaise, lemon juice, and Dijon mustard in a medium bowl.
  5. 5. Season the dressing with salt, pepper, and a pinch of sugar (if using).
  6. 6. In a larger bowl, combine chicken, strawberries, grapes, almonds, celery, and red onion.
