- 3 cups cooked chicken, shredded or diced
- 1 cup fresh strawberries, hulled and quartered or sliced
- 1/2 cup red grapes, halved
- 1/4 cup slivered almonds, toasted (optional)
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1/2 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- A pinch of sugar (optional)
- Fresh mint or basil, chopped (for garnish, optional)
Instructions
- 1. Prepare the chicken by shredding or dicing cooked chicken.
- 2. Prep the produce: Hull and quarter/slice strawberries, halve grapes, finely chop celery and red onion.
- 3. Toast slivered almonds in a dry skillet until golden brown, then cool.
- 4. Whisk mayonnaise, lemon juice, and Dijon mustard in a medium bowl.
- 5. Season the dressing with salt, pepper, and a pinch of sugar (if using).
- 6. In a larger bowl, combine chicken, strawberries, grapes, almonds, celery, and red onion.
- 7. Pour the dressing over the mixture and gently fold to coat.
- 8. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- 9. Stir gently before serving and garnish with fresh herbs if desired.
