Ingredients

  • 2 pounds small Yukon Gold potatoes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives or parsley, for garnish (optional)

Instructions

  1. 1. Wash and optionally peel the Yukon Gold potatoes. Halve or quarter larger ones for uniform size.
  2. 2. Place potatoes in a pot, cover with cold, salted water, bring to a boil, then simmer for 15-20 minutes until fork-tender.
  3. 3. Drain potatoes in a colander and let them steam for 5-10 minutes to release excess moisture.
  4. 4. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. 5. Arrange drained potatoes on the baking sheet, leaving space between them. Gently smash each potato to about 1/2 to 3/4 inch thickness using the bottom of a mug or masher.
  6. 6. In a small bowl, whisk together melted butter, olive oil, garlic powder, and onion powder. Drizzle evenly over the smashed potatoes. Season generously with salt and pepper.
  7. 7. Bake for 20-25 minutes, or until potatoes begin to puff and lightly brown.
  8. 8. Remove from oven, sprinkle shredded cheddar cheese over the potatoes.
  9. 9. Return to oven and bake for another 10-15 minutes, until cheese is melted and bubbly, and potato edges are crispy and golden brown.
  10. 10. Let rest for a few minutes before serving. Garnish with chives or parsley if desired.

Notes

Allow potatoes to cool completely before storing in an airtight container in the refrigerator for 2-3 days. Reheat in a preheated oven at 375°F (190°C) for 10-15 minutes for best crispiness.
