Instructions

  1. 1. Preheat your oven to 400°F (200°C). If using a cast-iron skillet for cooking steak, place it in the oven to preheat.
  2. 2. In a medium bowl, toss the potatoes with 2 tablespoons of olive oil, rosemary, thyme, smoked paprika, salt, and pepper. Spread in a single layer on a baking sheet.
  3. 3. Roast potatoes for 25-30 minutes, until tender and crispy.
  4. 4. While potatoes roast, combine steak cubes with remaining 2 tablespoons olive oil, minced garlic, salt, and pepper in a bowl. Marinate for at least 15-20 minutes at room temperature.

  6. 6. Add steak bites in a single layer (cook in batches if needed) and sear for 1-2 minutes per side until browned.
