Description

A light and refreshing salad featuring tender shredded chicken, juicy strawberries, and crunchy pecans, perfect for a quick lunch or dinner.

Ingredients

Scale
  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4 inch pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • 1/3 cup chopped pecans
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons Greek yogurt, plain
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon pepper
  • Salt to taste

Instructions

  1. Cut and chop the ingredients accordingly.
  2. In a mixing bowl, combine all the ingredients except the strawberries, stirring to mix them thoroughly.
  3. Add more mayo or yogurt to achieve your desired consistency.
  4. Fold in the strawberries carefully, or wait until just before serving if you prefer them fresh.
  5. This salad can be served immediately, or you can chill it for about 10-20 minutes to let the flavors meld.

Notes

Fresh ingredients yield the best results; consider leaving strawberries out until serving for optimal freshness. A mix of dark and light meat chicken can enhance flavor.
