A classic comfort food recipe for Ground Beef Stroganoff made with simple ingredients for a quick and delicious weeknight meal. Tender ground beef, mushrooms, and noodles in a creamy sauce.

- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 1 teaspoon salt, divided
- ½ teaspoon black pepper, divided
- 1 tablespoon all-purpose flour
- 1 ½ cups beef broth
- ½ cup sour cream, at room temperature
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 8 ounces egg noodles
- Fresh parsley, chopped (for garnish, optional)
Instructions
- 1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- 2. Add the chopped onion to the skillet with the browned beef. Cook, stirring occasionally, until the onion softens, about 4-5 minutes. Stir in the minced garlic and sliced mushrooms. Cook for another 5-7 minutes, or until the mushrooms have released their liquid and started to brown. Season with ½ teaspoon of salt and ¼ teaspoon of black pepper.
- 3. Sprinkle the flour over the beef and mushroom mixture. Stir well and cook for about 1 minute, allowing the flour to toast slightly.
- 4. Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer. Stir in the Worcestershire sauce and Dijon mustard.
- 5. While the sauce is simmering, cook the egg noodles according to package directions in a separate pot of boiling salted water. Drain the noodles well.
- 6. Reduce the heat to low. Stir in the sour cream until it’s fully incorporated and the sauce is smooth and creamy. Be careful not to boil the sauce after adding the sour cream. Taste and adjust seasoning with the remaining ½ teaspoon of salt and ¼ teaspoon of black pepper if needed.
- 7. Add the drained egg noodles to the skillet with the stroganoff sauce. Gently stir to coat the noodles evenly. Serve immediately, garnished with fresh parsley if desired.
Notes
Store completely cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, adding a tablespoon or two of broth or milk if needed to loosen the sauce. Microwaving is also an option, stirring halfway through.
