- 2 pounds Yukon Gold potatoes (or your favorite waxy potato), scrubbed and cut into 1-inch chunks
- 1 packet (about 1 ounce) Lipton® Onion Soup Mix
- 1/2 cup unsalted butter, cut into pats
- 1/4 cup chicken broth (or vegetable broth for a vegetarian option)
- Optional: Fresh parsley, chopped, for garnish
Instructions
- 1. Place the potato chunks into your slow cooker.
- 2. Evenly sprinkle the entire packet of Lipton® Onion Soup Mix over the potato chunks.
- 3. Arrange the pats of butter over the seasoned potatoes.
- 4. Pour the chicken (or vegetable) broth around the edges of the slow cooker.
- 5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until potatoes are fork-tender.
- 6. Gently stir to combine the melted butter and broth with the soup mix to create a savory sauce.
- 7. Garnish with fresh parsley if desired before serving.
