Ingredients

Scale
  • 2 pounds Yukon Gold potatoes (or your favorite waxy potato), scrubbed and cut into 1-inch chunks
  • 1 packet (about 1 ounce) Lipton® Onion Soup Mix
  • 1/2 cup unsalted butter, cut into pats
  • 1/4 cup chicken broth (or vegetable broth for a vegetarian option)
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. 1. Place the potato chunks into your slow cooker.
  2. 2. Evenly sprinkle the entire packet of Lipton® Onion Soup Mix over the potato chunks.
  3. 3. Arrange the pats of butter over the seasoned potatoes.
  4. 4. Pour the chicken (or vegetable) broth around the edges of the slow cooker.
  5. 5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until potatoes are fork-tender.
  6. 6. Gently stir to combine the melted butter and broth with the soup mix to create a savory sauce.
  7. 7. Garnish with fresh parsley if desired before serving.

Notes
