Description

A savory, hearty stew with ground beef and fresh green chiles, perfect for busy weeknight dinners.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups green chiles, chopped (fresh or canned)
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup potatoes, diced (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the ground beef, breaking it apart, and cook until browned.
  4. Mix in the green chiles, diced tomatoes, beef broth, cumin, and optional potatoes.
  5. Bring the mixture to a boil, then reduce the heat to let it simmer for about 30 minutes.
  6. Season with salt and pepper to taste before serving hot.

Notes

Brown the ground beef thoroughly for best flavor; use fresh chiles for a vibrant taste. Consider roasting chiles before adding to the pot.
