- 1/2 teaspoon dried thyme
- 1/4 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh lemon juice (optional)
Instructions
- 1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- 2. Cut sweet potatoes into uniform 1-inch cubes.
- 3. Toss sweet potatoes with olive oil in a large bowl until well coated.
- 4. Add minced garlic, salt, pepper, thyme, and paprika. Toss to combine.
- 5. Arrange in single layer on prepared baking sheet, avoiding overcrowding.
- 6. Roast for 20 minutes without moving.
- 7. Flip sweet potatoes and roast another 15-20 minutes until tender and golden.
- 8. Sprinkle with Parmesan cheese and roast 3-5 minutes more until cheese melts.
- 9. Remove from oven and garnish with fresh parsley and lemon juice if desired.
- 10. Serve immediately while hot.
Notes
Store leftovers in refrigerator for up to 4 days. Reheat in oven at 400°F for best results. Avoid overcrowding pan to ensure proper caramelization.
