A quick and comforting plant-based stroganoff made with creamy white beans and savory mushrooms in a single pot. Perfect for a speedy weeknight meal.

- 1 tablespoon olive oil
- 1 large yellow onion, chopped
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 2 cups vegetable broth
- ½ cup unsweetened plain almond milk (or other plant-based milk)
- 2 tablespoons nutritional yeast
- 1 tablespoon Dijon mustard
- 1 teaspoon cornstarch (or arrowroot starch) dissolved in 2 tablespoons cold water
- Fresh parsley, chopped, for garnish
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- 2. Add sliced mushrooms to the pot. Increase heat to medium-high and cook, stirring, until mushrooms release moisture and begin to brown, about 5-8 minutes.
- 3. Stir in dried thyme and smoked paprika. Cook for 30 seconds until fragrant. Season with salt and pepper. Add rinsed cannellini beans and stir to coat.
- 4. Pour in vegetable broth and almond milk. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- 5. Stir in nutritional yeast and Dijon mustard. Let simmer gently for 5 minutes.
- 6. While simmering, whisk cornstarch and cold water in a small bowl until smooth. Slowly drizzle slurry into simmering stroganoff, stirring constantly, until thickened, about 1-2 minutes.
- 7. Remove from heat. Taste and adjust seasoning. Garnish with fresh parsley before serving.
Notes
Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop with a splash of broth or milk to loosen the sauce.
