- 1 pound ground beef (80/20 or 85/15 recommended for flavor)
- 1 cup finely chopped yellow onion (about 1/2 medium onion)
- 1/2 cup finely chopped green bell pepper (about 1/2 medium pepper)
- 1/2 cup finely chopped celery (about 2 ribs)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional, for a touch of heat)
- 1 cup long-grain white rice, uncooked
- 2 cups low-sodium beef broth (or chicken broth)
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- 1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain excess grease.
- 2. Add chopped onion, green bell pepper, and celery. Cook until softened, about 5-7 minutes.
- 3. Stir in minced garlic, thyme, oregano, and cayenne (if using). Cook for 1 minute until fragrant.
- 4. Add uncooked rice and stir for 1-2 minutes to toast slightly.
- 5. Pour in beef broth and Worcestershire sauce. Season with salt and pepper. Stir to combine.
- 6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
- 7. Remove from heat and let stand, covered, for 5 minutes.
- 8. Fluff with a fork, adjust seasoning if needed, and garnish with parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stovetop with a splash of liquid for best texture, or in the microwave.
