Description

A quick and healthy Broccoli Cheddar Soup that’s creamy and satisfying. Perfect for busy weeknights!


Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese (freshly grated is preferred)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil over medium heat in a large pot. Add chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add broccoli florets and vegetable broth, bringing to a boil. Then, reduce heat and simmer until broccoli is tender, about 10-15 minutes.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in the milk or cream and shredded cheddar cheese until fully melted and incorporated.
  5. Season with salt and pepper to taste before serving hot.

Notes

For a lighter version, reduce the amount of cheese used. Store leftovers in the fridge for up to 5 days or freeze for up to 4 months.
