Description

Oven-roasted baby potatoes coated in garlic butter for a crispy, tender side dish perfect for any meal.


Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, melt the butter and add the minced garlic, mixing well.
  4. Add the halved potatoes to the bowl and toss to coat with the garlic butter.
  5. Sprinkle with salt, pepper, garlic powder, and paprika, then toss again.
  6. Spread the potatoes in a single layer on a baking sheet.
  7. Roast in the preheated oven for 25-30 minutes or until golden and crispy, flipping halfway through.
  8. Remove from oven and sprinkle with fresh parsley before serving.

Notes

These potatoes are best served warm. They can be stored in the fridge for 3-4 days. Reheat in a hot oven or skillet to restore crispness.
