Description

Recreate the popular Outback Steakhouse Alice Springs Chicken at home with this easy-to-follow recipe. Featuring tender chicken breasts topped with sautéed mushrooms, crispy bacon, and melted cheese sauce.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 68 ounces each)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup cooked and crumbled bacon (about 46 slices)
  • 1/4 cup white wine (optional)
  • 1/2 cup heavy cream
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley, for garnish
  • Salt and freshly ground black pepper to taste
  • Optional: 1 teaspoon Worcestershire sauce

Instructions

  1. 1. Pound chicken breasts to an even 1/2-inch thickness. Season generously with salt and pepper.
  2. 2. Grill or pan-sear chicken breasts until cooked through (about 5-7 minutes per side). Set aside.
  3. 3. In the same skillet, melt butter over medium heat. Add mushrooms and onion; cook until browned and tender (5-7 minutes).
  4. 4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. 5. (Optional) Deglaze with white wine, scraping up browned bits, and reduce by half. Add Worcestershire sauce if using.
  6. 6. Pour in heavy cream and bring to a simmer. Stir in Monterey Jack and cheddar cheeses until melted and smooth. Season sauce with salt and pepper.
  7. 7. Stir in crumbled bacon.
  8. 8. Place cooked chicken back into the skillet (if oven-safe) or transfer to a baking dish. Spoon the mushroom, bacon, and cheese sauce over each chicken breast.
  9. 9. Bake at 375°F (190°C) for 5-10 minutes, or until bubbly and heated through.
  10. 10. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in an oven-safe dish at 350°F (175°C) for 15-20 minutes, or in a skillet over low heat.
