- 4 boneless, skinless chicken breasts (about 6–8 ounces each)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 ounces cremini mushrooms, sliced
- 1/2 cup chopped yellow onion
- 2 cloves garlic, minced
- 1/2 cup cooked and crumbled bacon (about 4–6 slices)
- 1/4 cup white wine (optional)
- 1/2 cup heavy cream
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup shredded cheddar cheese
- 1 tablespoon chopped fresh parsley, for garnish
- Salt and freshly ground black pepper to taste
- Optional: 1 teaspoon Worcestershire sauce
Instructions
- 1. Pound chicken breasts to an even 1/2-inch thickness. Season generously with salt and pepper.
- 2. Grill or pan-sear chicken breasts until cooked through (about 5-7 minutes per side). Set aside.
- 3. In the same skillet, melt butter over medium heat. Add mushrooms and onion; cook until browned and tender (5-7 minutes).
- 4. Stir in minced garlic and cook for 1 minute until fragrant.
- 5. (Optional) Deglaze with white wine, scraping up browned bits, and reduce by half. Add Worcestershire sauce if using.
- 6. Pour in heavy cream and bring to a simmer. Stir in Monterey Jack and cheddar cheeses until melted and smooth. Season sauce with salt and pepper.
- 7. Stir in crumbled bacon.
- 8. Place cooked chicken back into the skillet (if oven-safe) or transfer to a baking dish. Spoon the mushroom, bacon, and cheese sauce over each chicken breast.
- 9. Bake at 375°F (190°C) for 5-10 minutes, or until bubbly and heated through.
- 10. Garnish with fresh parsley and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in an oven-safe dish at 350°F (175°C) for 15-20 minutes, or in a skillet over low heat.
