  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 or 90/10 works well)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ pounds potatoes (Yukon Gold or Russet), peeled and cut into ½-inch cubes
  • ½ cup beef broth
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Optional garnish: fresh parsley, chopped

Instructions

  1. 1. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease, leaving a little behind for flavor.
  2. 2. Add the chopped onion to the skillet with the browned beef. Cook, stirring occasionally, until the onion is softened and translucent, about 5-7 minutes.
  3. 3. Stir in the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic.
  4. 4. Add the cubed potatoes to the skillet. Stir to combine them with the beef and onion mixture.
  5. 5. Pour in the beef broth. Add the dried Italian seasoning, salt, and pepper. Stir everything together well to ensure the potatoes are evenly coated with the seasonings and liquid.
  6. 6. Bring the mixture to a simmer. Once simmering, reduce the heat to medium-low, cover the skillet, and cook for 15-20 minutes, or until the potatoes are fork-tender. Stir occasionally to prevent sticking.
  7. 7. Once the potatoes are tender, remove the lid and continue to cook for another 3-5 minutes, allowing any excess liquid to evaporate and the bottom to get a little crispy.
  8. 8. Taste and adjust seasoning with more salt and pepper if needed.
  9. 9. Garnish with fresh parsley, if desired. Serve hot directly from the skillet.

Notes

Allow the cooked dish to cool completely before storing. Transfer leftovers to an airtight container and store in the refrigerator for up to 3-4 days. Reheat gently in a skillet over medium-low heat or in the microwave until heated through.
