Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 2 large sweet potatoes, peeled and diced into ½-inch cubes
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup beef broth
  • 1 cup shredded Mexican cheese blend
  • ¼ cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 lime, cut into wedges

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add sweet potatoes and cook 8-10 minutes until golden.

  3. 3. Add onion and cook 3-4 minutes until softened.
  4. 4. Stir in garlic and cook 30 seconds until fragrant.
  5. 5. Add bell peppers and cook 4-5 minutes until slightly softened.
  6. 6. Add all spices and stir to coat. Cook 1-2 minutes to toast spices.
  7. 7. Add tomatoes, black beans, and corn. Stir to combine.
  8. 8. Pour in beef broth, reduce heat to medium-low, cover and simmer 12-15 minutes.
  9. 9. Remove lid and cook off excess liquid, 2-3 minutes.
  10. 10. Top with cheese, cover and let melt off heat for 2-3 minutes.
  11. 11. Garnish with cilantro and green onions. Serve with lime wedges.
