Description

A quick and delicious one-pan dinner featuring savory ground meat, tender potatoes, and a rich, creamy sauce. This easy recipe is ready in just 30 minutes, making it perfect for busy weeknights.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground meat (beef, turkey, or pork)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound potatoes, cut into 1/2-inch cubes (Yukon Gold or red potatoes work well)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. 1. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the ground meat and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. 2. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. 3. Add the cubed potatoes, Italian seasoning, salt, and pepper to the skillet. Stir everything to coat the potatoes evenly.
  4. 4. Pour in the chicken or vegetable broth. Bring to a simmer, then reduce the heat to medium-low, cover the skillet, and let it cook for 10-12 minutes, or until the potatoes are fork-tender. Stir occasionally to prevent sticking.
  5. 5. Uncover the skillet and stir in the heavy cream and grated Parmesan cheese. Cook, stirring, until the sauce has thickened slightly, about 3-5 minutes. Taste and adjust seasoning if needed.
  6. 6. Garnish with fresh parsley, if desired, before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm the skillet contents on the stovetop over low heat, stirring occasionally. You may need to add a splash of broth or milk if the sauce has thickened too much.
