Description

A quick and comforting one-pan dinner featuring flavorful ground beef, rice, and spices, absorbed in a savory tomato broth.


Ingredients

  • 1 lb ground beef
  • 1 cup long-grain white rice, rinsed
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 medium yellow onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 1 cup corn, frozen or canned, drained
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika, optional
  • Salt and pepper to taste, start with 1 teaspoon salt and 1/2 teaspoon black pepper
  • 1 cup shredded cheddar or Monterey Jack cheese, optional
  • Chopped cilantro for garnish, optional

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and no longer pink, breaking it into small pieces as it cooks, then drain excess fat if needed.
  2. Add the chopped onion and minced garlic to the skillet, cooking until the onion is softened and translucent, about 4 minutes.
  3. Stir in the rinsed rice, diced tomatoes with their juices, beef broth, corn, chili powder, cumin, smoked paprika if using, and season with salt and pepper, mixing to combine.
  4. Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low, cover tightly, and simmer for about 18 to 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove the skillet from heat, sprinkle the shredded cheese evenly over the top if using, cover again and let sit for 3 to 5 minutes until the cheese melts.
  6. Fluff with a fork, taste and adjust seasoning if needed, then garnish with chopped cilantro and serve warm.

Notes

For more root vegetable comfort, consider using potatoes. Store leftovers in an airtight container for up to 3 to 4 days, or freeze portions for up to 3 months.
