Instructions

  1. 1. Preheat oven to 425°F (220°C).
  2. 2. Cut potatoes into uniform bite-sized wedges or chunks.
  3. 3. Place potatoes in a pot, cover with cold water, and season generously with salt.
  4. 4. Bring to a boil, then simmer for 10-12 minutes until fork-tender but not mushy.
  5. 5. While potatoes boil, whisk together olive oil, lemon juice, garlic, oregano, thyme, rosemary (if using), salt, and pepper in a large bowl.
  6. 6. Drain potatoes very well and let them sit in the colander for a few minutes to dry.
  7. 7. Gently shake the colander to rough up the edges of the potatoes.
  8. 8. Add the roughed-up potatoes to the bowl with the lemon-herb mixture and toss to coat evenly.
  9. 9. Pour the broth or water into the bottom of a large, rimmed baking sheet or roasting pan.
  10. 10. Spread the coated potatoes in a single layer on the baking sheet, ensuring they are not crowded.
  11. 11. Roast for 30-40 minutes, shaking the pan or tossing potatoes halfway through.
  12. 12. Continue roasting until golden brown and crispy on the outside.

Notes
