Description

Whip up this simple Lemon Garlic Butter Cod for a quick, healthy, and flavorful weeknight dinner. Tender fish coated in a bright, buttery sauce.

Ingredients

Scale
  • 1.5 pounds cod fillets
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Red pepper flakes
  • Optional: Lemon wedges

Instructions

  1. 1. Pat cod fillets dry and season with salt and pepper.
  2. 2. Heat olive oil in a skillet over medium-high heat. Sear cod for 3-4 minutes per side until golden brown. Remove cod and set aside.
  3. 3. Reduce heat to medium. Melt butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.
  4. 4. Pour in lemon juice and scrape up browned bits from the pan. Simmer for 1-2 minutes.
  5. 5. Return cod to the skillet and spoon sauce over it. Simmer for 2-3 minutes until cooked through.
  6. 6. Garnish with fresh parsley and serve hot with optional lemon wedges.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat gently in a skillet over low heat with a splash of liquid or in the microwave with a damp paper towel.
