- 1.5 pounds cod fillets
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
- Optional: Red pepper flakes
- Optional: Lemon wedges
Instructions
- 1. Pat cod fillets dry and season with salt and pepper.
- 2. Heat olive oil in a skillet over medium-high heat. Sear cod for 3-4 minutes per side until golden brown. Remove cod and set aside.
- 3. Reduce heat to medium. Melt butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.
- 4. Pour in lemon juice and scrape up browned bits from the pan. Simmer for 1-2 minutes.
- 5. Return cod to the skillet and spoon sauce over it. Simmer for 2-3 minutes until cooked through.
- 6. Garnish with fresh parsley and serve hot with optional lemon wedges.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat gently in a skillet over low heat with a splash of liquid or in the microwave with a damp paper towel.
