Whip up this incredibly flavorful and comforting Lemon Chicken Gnocchi dinner in one pot for a quick and easy weeknight meal. Tender chicken, pillowy gnocchi, and a luscious lemon cream sauce with fresh spinach.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 (16-ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Juice of 1/2 to 1 lemon (to taste)
  • 1 cup fresh spinach
  • Fresh parsley, chopped, for garnish

Instructions

  1. 1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and mostly cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. 2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
  3. 3. Pour in chicken broth and bring to a simmer, scraping up browned bits.
  4. 4. Add gnocchi and cook according to package directions, about 2-4 minutes, until they float.
  5. 5. Return chicken to the skillet. Reduce heat to low.
  6. 6. Stir in heavy cream and Parmesan cheese. Simmer gently for 2-3 minutes until sauce thickens.
  7. 7. Stir in lemon juice, starting with half a lemon, and taste.
  8. 8. Add fresh spinach and cook until wilted, about 1 minute.
  9. 9. Taste and adjust seasoning with salt and pepper as needed.
  10. 10. Serve immediately, garnished with fresh parsley and extra Parmesan.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, adding a splash of broth or water to loosen the sauce.
