Whip up this incredibly flavorful and comforting Lemon Chicken Gnocchi dinner in one pot for a quick and easy weeknight meal. Tender chicken, pillowy gnocchi, and a luscious lemon cream sauce with fresh spinach.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- Salt and freshly ground black pepper, to taste
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 4 cups low-sodium chicken broth
- 1 (16-ounce) package potato gnocchi
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- Juice of 1/2 to 1 lemon (to taste)
- 1 cup fresh spinach
- Fresh parsley, chopped, for garnish
Instructions
- 1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and mostly cooked through, about 5-7 minutes. Remove chicken and set aside.
- 2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
- 3. Pour in chicken broth and bring to a simmer, scraping up browned bits.
- 4. Add gnocchi and cook according to package directions, about 2-4 minutes, until they float.
- 5. Return chicken to the skillet. Reduce heat to low.
- 6. Stir in heavy cream and Parmesan cheese. Simmer gently for 2-3 minutes until sauce thickens.
- 7. Stir in lemon juice, starting with half a lemon, and taste.
- 8. Add fresh spinach and cook until wilted, about 1 minute.
- 9. Taste and adjust seasoning with salt and pepper as needed.
- 10. Serve immediately, garnished with fresh parsley and extra Parmesan.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, adding a splash of broth or water to loosen the sauce.
