Description

Ingredients

  • 2 pounds large shrimp, peeled and deveined
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 medium shallot, finely diced
  • 1 cup heavy cream
  • 8 ounces fresh spinach
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Pat shrimp dry and season with salt, pepper, paprika, and Italian seasoning. Let sit 10 minutes.
  2. 2. Heat olive oil and 2 tablespoons butter in large skillet over medium-high heat.
  3. 3. Cook shrimp 2-3 minutes per side until pink. Remove and set aside.
  4. 4. Reduce heat to medium, add remaining butter, garlic, and shallot. Cook 1-2 minutes.
  5. 5. Add heavy cream and cream cheese, whisking until smooth.
  6. 6. Stir in Parmesan cheese and red pepper flakes until thickened, 3-4 minutes.
  7. 7. Add spinach in handfuls, stirring as it wilts.
  8. 8. Return shrimp to pan with lemon juice, toss gently.
  9. 9. Heat through 1-2 minutes, garnish with parsley and serve.

Notes

Store leftovers up to 3 days. Reheat gently over low heat. Don’t freeze as cream sauce may separate.
