Ingredients

  • 1 pound ground beef (80/20 or 90/10 work well)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 cup all-purpose flour
  • 3 cups beef broth
  • 1/2 cup sour cream, at room temperature
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 9 ounces fresh refrigerated cheese tortellini
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess grease.
  2. 2. Add chopped onion and cook until softened, about 3-4 minutes.
  3. 3. Stir in minced garlic and sliced mushrooms. Cook for 5 minutes until mushrooms brown.
  4. 4. Sprinkle thyme, salt, and pepper. Stir.
