- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 1/4 cup hot honey (store-bought or homemade)
- 2 tablespoons soy sauce or tamari
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon red pepper flakes (optional, for extra heat)
- 4 oz feta cheese, crumbled
- Fresh parsley or chives, chopped, for garnish
Instructions
- 1. Pat the chicken cubes dry with paper towels. In a medium bowl, toss the chicken with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- 2. Heat a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken in a single layer, working in batches if necessary to avoid overcrowding the pan. Sear for 3-4 minutes per side, until golden brown and mostly cooked through. Remove the chicken from the skillet and set aside.
- 3. In the same skillet (no need to wipe it out), reduce the heat to medium. Add the hot honey, soy sauce, apple cider vinegar, and optional red pepper flakes. Stir well and bring to a gentle simmer. Let it bubble for 1-2 minutes until slightly thickened.
- 4. Return the seared chicken to the skillet. Toss the chicken in the glaze until each piece is well coated. Sprinkle the crumbled feta cheese over the chicken. Cover the skillet and let it cook for another 2-3 minutes, or until the feta is slightly softened and the chicken is fully cooked through.
- 5. Garnish with fresh chopped parsley or chives.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, or in a covered oven at 300°F (150°C) to prevent drying out.
