Honey Butter Smashed Potatoes

Description

Deliciously crispy and buttery smashed potatoes, enhanced with honey and herbs.


Ingredients

Scale
  • 1 lb baby Yukon gold potatoes
  • 4 Tbsp unsalted butter
  • 4 Tbsp honey
  • 1 tsp salt
  • Your favorite herb, optional (thyme, rosemary, sage, parsley, etc.)

Instructions

  1. Place potatoes into a large pot and pour enough cold water to cover them. Add a generous amount of salt and bring it to a boil.
  2. Reduce heat to medium-high and cook the potatoes until fork-tender, about 15-20 minutes.
  3. Rinse under cold water and drain the potatoes.
  4. Smash the potatoes gently with your palm or a large spoon.
  5. Heat a large cast iron pan over medium heat. Add butter, honey, salt, and herbs, mixing until creamy and bubbly.
  6. Once simmering, carefully place the smashed potatoes in the pan.
  7. Increase heat to medium-high and sear the first side for 5-7 minutes until golden brown.
  8. Flip the potatoes and cook for another 5-7 minutes until the second side is also golden.
  9. Remove from heat and sprinkle with extra herbs or black pepper to taste.

Notes

Best eaten fresh, same day. Crust may soften if stored overnight.
