Description
Deliciously crispy and buttery smashed potatoes, enhanced with honey and herbs.
Ingredients

- 1 lb baby Yukon gold potatoes
- 4 Tbsp unsalted butter
- 4 Tbsp honey
- 1 tsp salt
- Your favorite herb, optional (thyme, rosemary, sage, parsley, etc.)
Instructions
- Place potatoes into a large pot and pour enough cold water to cover them. Add a generous amount of salt and bring it to a boil.
- Reduce heat to medium-high and cook the potatoes until fork-tender, about 15-20 minutes.
- Rinse under cold water and drain the potatoes.
- Smash the potatoes gently with your palm or a large spoon.
- Heat a large cast iron pan over medium heat. Add butter, honey, salt, and herbs, mixing until creamy and bubbly.
- Once simmering, carefully place the smashed potatoes in the pan.
- Increase heat to medium-high and sear the first side for 5-7 minutes until golden brown.
- Flip the potatoes and cook for another 5-7 minutes until the second side is also golden.
- Remove from heat and sprinkle with extra herbs or black pepper to taste.
Notes
Best eaten fresh, same day. Crust may soften if stored overnight.
