Description

A dependable ground beef casserole that feeds the whole family while using simple pantry ingredients.


Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 1 can (15 oz) mixed vegetables, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tsp garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef and onion in a skillet over medium heat until meat is no longer pink, then drain excess fat.
  3. Combine the cooked beef mixture with diced potatoes, mixed vegetables, cream of mushroom soup, garlic powder, salt, and pepper in a large bowl.
  4. Transfer the mixture into a greased 9×13-inch baking dish.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove the foil, sprinkle cheese on top, and bake for an additional 15 minutes or until the potatoes are tender and the cheese is melted.
  7. Let it cool for a few minutes before serving.

Notes

For a crisper top, remove the foil for the last 20 minutes and broil for 1 to 2 minutes, watching closely.
