A comforting and filling casserole made with ground beef, potatoes, and a creamy mushroom sauce, perfect for a weeknight dinner.

- 1 lb ground beef, lean or 80/20
- 4 medium russet potatoes, thinly sliced
- 1 medium yellow onion, finely chopped
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 cup frozen mixed vegetables, thawed (optional)
- 1 1/2 cups shredded cheddar cheese, divided
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil or butter for sautéing
- 2 tbsp chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F and lightly grease a 9×13 inch casserole dish.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat, then add the chopped onion and cook until softened, about 4 minutes.
- Add 1 pound of ground beef to the skillet, season with garlic powder, onion powder, smoked paprika, salt, and pepper, and brown until no pink remains, about 6 to 8 minutes.
- Stir in the thawed mixed vegetables if using and cook for 2 more minutes, then remove from heat and drain excess fat if needed.
- Whisk together the cream of mushroom soup and milk in a medium bowl until smooth, taste and adjust seasoning.
- Arrange half of the potato slices in an even layer across the bottom of the prepared casserole dish.
- Spread the beef and vegetable mixture evenly over the potatoes, then pour half of the soup mixture on top.
- Layer the remaining potato slices over the beef, pour the remaining soup mixture evenly across, and season lightly with salt and pepper.
- Cover the dish tightly with foil and bake for 45 minutes.
- Remove the foil, sprinkle with 1 cup of shredded cheddar cheese, and bake uncovered for an additional 15 to 20 minutes until the potatoes are tender and the cheese is melted.
- Let the casserole rest for 10 minutes before serving, garnish with chopped parsley if desired.
Notes
For extra creaminess, stir in 2 tablespoons of sour cream into the soup mixture. This casserole reheats well and is great for leftovers.
