A hearty, budget-friendly ground beef casserole with layers of potatoes, vegetables, and cheese that bakes into one satisfying family meal.

- 1 pound ground beef (80/20 blend)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 3 medium russet potatoes, sliced thin
- 2 medium carrots, sliced into rounds
- 1 medium bell pepper, chopped
- 1 cup frozen corn kernels
- 1 cup frozen green beans
- 1 can (10.75 oz) cream of mushroom soup
- 1/2 cup beef broth
- 2 cups shredded cheddar cheese, divided
- 2 tablespoons butter, cut into pieces
Instructions
- 1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
- 2. Brown ground beef in large skillet over medium-high heat, 5-6 minutes.
- 3. Add onion and cook 3-4 minutes until translucent.
- 4. Stir in garlic and seasonings, cook 1 minute until fragrant.
- 5. Whisk soup and broth together in small bowl.
- 6. Layer half the potatoes in baking dish.
- 7. Spread beef mixture over potatoes.
- 8. Add all vegetables over beef layer.
- 9. Top with remaining potato slices.
- 10. Pour soup mixture over entire casserole.
- 11. Top with 1 cup cheese and butter pieces.
- 12. Cover with foil, bake 45 minutes.
- 13. Remove foil, bake 15 minutes more.
- 14. Add remaining cheese, bake 10-15 minutes until bubbly.
- 15. Rest 10 minutes before serving.
Notes
Store leftovers refrigerated up to 4 days. Can be frozen up to 3 months. Reheat covered in oven at 350°F.
