  • 1 bell pepper, chopped
  • 1 cup chopped broccoli florets
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1/2 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce (optional)
  • 1/4 cup shredded cheddar cheese, for topping (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  2. 2. Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
  3. 3. Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. 4. Add chopped bell pepper and broccoli florets. Cook for about 5 minutes until beginning to soften.
  5. 5. Pour in diced tomatoes, beef broth, and Worcestershire sauce (if using). Stir and bring to a simmer.
  6. 6. Reduce heat to low, cover, and simmer for 10-15 minutes until vegetables are tender and sauce has thickened.
