Description

Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups cooked white or brown rice
  • 2 tablespoons lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt
  • 2 cups shredded lettuce
  • 1 large tomato, diced
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • 1 avocado, sliced
  • 1/4 cup pickled jalapeños
  • 2 green onions, sliced
  • Lime wedges for serving

Instructions

  1. 1. Mix warm cooked rice with lime juice, cilantro, and salt. Set aside.
  2. 2. Heat olive oil in large skillet over medium-high heat. Cook onion 4-5 minutes until softened.
  3. 3. Add garlic and cook 30 seconds until fragrant.
  4. 4. Add ground beef, breaking up with spoon. Cook 6-8 minutes until browned. Drain excess fat.
  5. 5. Add taco seasoning, water, and drained tomatoes. Simmer 3-4 minutes.
  6. 6. Stir in black beans and cook 2-3 minutes until heated through.
  7. 7. Prepare fresh toppings while beef mixture cools slightly.
  8. 8. Assemble bowls with rice base, beef mixture, and desired toppings.
  9. 9. Garnish with green onions, sour cream, and avocado. Serve with lime wedges.

Notes

Store cooked beef mixture up to 4 days refrigerated or 3 months frozen. Keep fresh toppings separate until serving.
