- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 6 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley, plus extra for garnish
- 2 tablespoons chopped fresh chives (optional)
- Salt and freshly ground black pepper to taste
- 1 tablespoon olive oil (for cooking pasta)
- Grated Parmesan cheese, for serving (optional)
Instructions
- 1. Bring a large pot of generously salted water to a rolling boil. Cook linguine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- 2. Pat shrimp dry and season with salt and pepper.
- 3. In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes if using; cook 1 minute until fragrant.
- 4. Add shrimp and cook 1-2 minutes per side until pink and opaque.
- 5. Pour in white wine and lemon juice. Simmer for 2-3 minutes to reduce slightly.
- 6. Add drained linguine to the skillet. Toss to coat, adding reserved pasta water a tablespoon at a time if needed for sauce consistency.
- 7. Stir in parsley and chives. Taste and adjust seasoning.
- 8. Serve immediately, garnished with extra parsley and Parmesan cheese if desired.
Notes
Allow the shrimp scampi to cool completely before storing. Transfer to an airtight container and refrigerate for up to 2-3 days. Gently reheat in a skillet over low heat with a splash of water or white wine. Avoid microwaving.
