Description

A simple and flavorful slow cooker recipe for tender, shredded chicken infused with vibrant cilantro and zesty lime. Perfect for weeknight meals.


Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup low-sodium chicken broth
  • 1/2 cup fresh lime juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. 1. Pat chicken dry and season with salt and pepper.
  2. 2. Whisk together chicken broth, lime juice, olive oil, garlic, cumin, and chili powder in a bowl.
  3. 3. Place chicken in the slow cooker, then pour the liquid mixture over it.
  4. 4. Sprinkle half of the chopped cilantro over the chicken.
  5. 5. Cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is cooked through and tender.
  6. 6. Remove chicken and shred with two forks.
  7. 7. Optional: Reduce cooking liquid on the stovetop to thicken sauce.
  8. 8. Return shredded chicken to the slow cooker with sauce, or serve as is. Stir in remaining cilantro.
  9. 9. Taste and adjust seasoning with salt and pepper if needed.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can also be frozen for up to 2-3 months. Reheat gently on the stovetop with a splash of liquid for best results.
