Description

Hearty comfort food featuring creamy butter beans simmered in rich tomato sauce with fresh basil. A satisfying one-pot meal that’s both nutritious and delicious.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1 cup vegetable broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon balsamic vinegar
  • 1/4 cup fresh basil, chopped

Instructions

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add diced onion and cook 5-7 minutes until translucent.
  3. 3. Add garlic and cook 30-60 seconds until fragrant.
  4. 4. Stir in tomato paste and cook 2 minutes until darkened.
  5. 5. Add crushed tomatoes, scraping up any browned bits.
  6. 6. Add butter beans, broth, oregano, thyme, red pepper flakes, salt, pepper, and bay leaf.
  7. 7. Bring to boil, then reduce heat and simmer 20-25 minutes uncovered.
  8. 8. Remove bay leaf and stir in balsamic vinegar.
  9. 9. Remove from heat and stir in fresh basil.
  10. 10. Taste and adjust seasoning as needed.

Notes

Store leftovers in refrigerator up to 4 days or freeze up to 3 months. Add fresh basil after reheating for best flavor.
