- 2 tablespoons olive oil
- 1 large onion, diced (about 1 cup)
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (28 oz) crushed tomatoes
- 2 cans (15 oz each) butter beans, drained and rinsed
- 1 cup vegetable broth
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon balsamic vinegar
- 1/4 cup fresh basil, chopped
Instructions
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add diced onion and cook 5-7 minutes until translucent.
- 3. Add garlic and cook 30-60 seconds until fragrant.
- 4. Stir in tomato paste and cook 2 minutes until darkened.
- 5. Add crushed tomatoes, scraping up any browned bits.
- 6. Add butter beans, broth, oregano, thyme, red pepper flakes, salt, pepper, and bay leaf.
- 7. Bring to boil, then reduce heat and simmer 20-25 minutes uncovered.
- 8. Remove bay leaf and stir in balsamic vinegar.
- 9. Remove from heat and stir in fresh basil.
- 10. Taste and adjust seasoning as needed.
Notes
Store leftovers in refrigerator up to 4 days or freeze up to 3 months. Add fresh basil after reheating for best flavor.
