- 1 pound ground beef
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt, plus more to taste
- ½ teaspoon black pepper, plus more to taste

- ¼ teaspoon dried rosemary (optional)
- 1 (15-ounce) can diced tomatoes, undrained
- 1 (10.75-ounce) can condensed tomato soup
- 1 medium head of green cabbage (about 2 pounds), cored and thinly sliced
- ½ cup beef broth
- 1 cup shredded cheddar cheese
Instructions
- 1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- 2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned; drain excess grease.
- 3. Add chopped onion to the skillet and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more.
- 4. Stir in salt, pepper, thyme, and rosemary (if using).
- 5. Pour in undrained diced tomatoes and condensed tomato soup. Stir to combine.
- 6. Add thinly sliced cabbage to the skillet and stir into the beef mixture.
- 7. Pour in beef broth. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes, until cabbage begins to wilt.
- 8. Pour the mixture into the prepared baking dish and spread evenly.
- 9. Sprinkle shredded cheddar cheese over the top.
- 10. Bake for 25-30 minutes, or until heated through and cheese is melted and bubbly.
- 11. Let rest for 5-10 minutes before serving.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes or in the microwave.
