- 2 pounds Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 packet (1 ounce) dry ranch seasoning mix
- 1/2 cup shredded cheddar cheese (or a cheddar-Monterey Jack blend)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. Wash and scrub Yukon Gold potatoes, then cut into uniform 1-inch cubes.
- 3. In a large bowl, toss potato cubes with olive oil until lightly coated.
- 4. Sprinkle the dry ranch seasoning mix over the oiled potatoes and toss to distribute evenly.
- 5. Spread the seasoned potato cubes in a single layer on a large baking sheet, ensuring they are not overcrowded.
- 6. Roast for 20-25 minutes, shaking the pan halfway through, until potatoes begin to soften and color.
- 7. Remove from oven and sprinkle shredded cheddar cheese evenly over the potatoes.
- 8. Return to oven and roast for another 5-10 minutes, or until cheese is melted and bubbly and potatoes are tender and crispy.
- 9. Garnish with fresh chopped parsley, if desired, and let rest briefly before serving.
