Description

Simple and delicious Roasted Cheesy Ranch Potatoes, perfect as a side dish for any meal. Easy to make with basic ingredients for a crowd-pleasing flavor.

Ingredients

Scale
  • 2 pounds Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1/2 cup shredded cheddar cheese (or a cheddar-Monterey Jack blend)
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Wash and scrub Yukon Gold potatoes, then cut into uniform 1-inch cubes.
  3. 3. In a large bowl, toss potato cubes with olive oil until lightly coated.
  4. 4. Sprinkle the dry ranch seasoning mix over the oiled potatoes and toss to distribute evenly.
  5. 5. Spread the seasoned potato cubes in a single layer on a large baking sheet, ensuring they are not overcrowded.
  6. 6. Roast for 20-25 minutes, shaking the pan halfway through, until potatoes begin to soften and color.
  7. 7. Remove from oven and sprinkle shredded cheddar cheese evenly over the potatoes.
  8. 8. Return to oven and roast for another 5-10 minutes, or until cheese is melted and bubbly and potatoes are tender and crispy.
  9. 9. Garnish with fresh chopped parsley, if desired, and let rest briefly before serving.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven or toaster oven for best results.
