Description

A simple and flavorful roasted potato recipe that’s perfect as a side dish for any meal. Minimal ingredients, maximum taste!


Ingredients

  • 2 pounds Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure each potato piece is evenly coated.
  3. 3. Spread the seasoned potatoes in a single layer on a baking sheet. Avoid overcrowding the pan.
  4. 4. Roast for 25-35 minutes, or until the potatoes are tender when pierced with a fork and have a lightly golden-brown exterior. Stir about halfway through cooking.
  5. 5. Once cooked, remove from the oven and sprinkle with fresh parsley before serving.

Notes

Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes or in a skillet with a little oil.
