- 4 boneless, skinless chicken breasts (6–8 oz each)
- 1 cup panko breadcrumbs
- ¾ cup freshly grated Parmesan cheese
- ½ cup all-purpose flour
- 2 large eggs
- 2 tablespoons mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- Cooking spray
Instructions
- 1. Preheat oven to 425°F and line a baking sheet with parchment paper sprayed with cooking spray.
- 2. Pat chicken breasts dry and pound to even ¾-inch thickness if needed.
- 3. Set up breading station: flour with salt and pepper in first dish, eggs whisked with mayonnaise in second dish, panko mixed with Parmesan and seasonings in third dish.
- 4. Drizzle olive oil over breadcrumb mixture and toss to combine.
- 5. Dredge each chicken breast in flour, then egg mixture, then breadcrumb mixture, pressing firmly to coat.
- 6. Place on prepared baking sheet and spray tops lightly with cooking spray.
- 7. Bake 18-22 minutes until internal temperature reaches 165°F and coating is golden.
- 8. Rest 5 minutes before slicing and serving.
Notes
Store leftovers in refrigerator up to 3 days. Reheat in 350°F oven to maintain crispiness.
