- 2 pounds boneless, skinless chicken breasts or thighs
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1½ cups panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil or melted butter
- Cooking spray
Instructions
- 1. Preheat oven to 425°F. Line baking sheet with parchment paper and spray with cooking spray.
- 2. Cut chicken into 1-inch bite-sized pieces and pat dry with paper towels.
- 3. Set up three bowls: flour in first, beaten eggs in second, and breadcrumbs mixed with all seasonings in third.
- 4. Dredge chicken pieces in flour, then eggs, then seasoned breadcrumbs, pressing gently to adhere.
- 5. Arrange on baking sheet with space between pieces. Drizzle with olive oil.
- 6. Bake 15-18 minutes, flipping halfway through, until internal temperature reaches 165°F.
- 7. Rest 2-3 minutes before serving.
Notes
Store leftovers in refrigerator for up to 4 days. Reheat in 375°F oven for best crispiness.
