Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1½ cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil or melted butter
  • Cooking spray

Instructions

  1. 1. Preheat oven to 425°F. Line baking sheet with parchment paper and spray with cooking spray.
  2. 2. Cut chicken into 1-inch bite-sized pieces and pat dry with paper towels.
  3. 3. Set up three bowls: flour in first, beaten eggs in second, and breadcrumbs mixed with all seasonings in third.
  4. 4. Dredge chicken pieces in flour, then eggs, then seasoned breadcrumbs, pressing gently to adhere.
  5. 5. Arrange on baking sheet with space between pieces. Drizzle with olive oil.
  6. 6. Bake 15-18 minutes, flipping halfway through, until internal temperature reaches 165°F.
  7. 7. Rest 2-3 minutes before serving.
