Description
A flavorful and hearty Mexican Ground Beef Casserole that’s easy to make for weeknight dinners. Packed with seasoned ground beef, beans, rice, and melted cheese.

- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 (4 ounce) can diced green chilies, undrained
- 1 packet taco seasoning (or your own blend)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: sour cream, salsa, chopped cilantro, sliced jalapeños
Instructions
- 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- 2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned; drain excess grease.
- 3. Add chopped onion and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- 4. Stir in black beans, Rotel, and diced green chilies.
- 5. Add taco seasoning, cumin, chili powder, salt, and pepper. Stir well.
- 6. Bring to a simmer, then reduce heat and cook for 10 minutes to meld flavors.
- 7. Stir in cooked rice until evenly distributed.
- 8. Spoon half of the mixture into the prepared baking dish.
- 9. Sprinkle half of the cheddar and Monterey Jack cheeses over the mixture.
- 10. Spoon remaining mixture over the cheese layer.
- 11. Top with remaining cheeses.
- 12. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
- 13. Let stand for 5-10 minutes before serving.
Notes
Store leftovers tightly covered in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) or in the microwave until heated through.
