Description

A flavorful and hearty Mexican Ground Beef Casserole that’s easy to make for weeknight dinners. Packed with seasoned ground beef, beans, rice, and melted cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 packet taco seasoning (or your own blend)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, chopped cilantro, sliced jalapeños

Instructions

  1. 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned; drain excess grease.
  3. 3. Add chopped onion and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  4. 4. Stir in black beans, Rotel, and diced green chilies.
  5. 5. Add taco seasoning, cumin, chili powder, salt, and pepper. Stir well.
  6. 6. Bring to a simmer, then reduce heat and cook for 10 minutes to meld flavors.
  7. 7. Stir in cooked rice until evenly distributed.
  8. 8. Spoon half of the mixture into the prepared baking dish.
  9. 9. Sprinkle half of the cheddar and Monterey Jack cheeses over the mixture.
  10. 10. Spoon remaining mixture over the cheese layer.
  11. 11. Top with remaining cheeses.
  12. 12. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
  13. 13. Let stand for 5-10 minutes before serving.

Notes

Store leftovers tightly covered in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) or in the microwave until heated through.
