A hearty one-pan dinner featuring seasoned ground beef, crispy potatoes, colorful bell peppers, and melted cheese that satisfies the whole family.

- 2 pounds ground beef (80/20 blend)
- 2 pounds russet potatoes, diced into ½-inch cubes
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 3 green onions, chopped
- ¼ cup fresh parsley, chopped
- 2 tablespoons butter
Instructions
- 1. Heat olive oil in a large cast iron skillet over medium-high heat.
- 2. Add diced potatoes and cook undisturbed for 4-5 minutes until golden. Stir and cook 3-4 minutes more.
- 3. Push potatoes aside and add ground beef. Brown for 5-6 minutes, breaking into pieces.
- 4. Add onion and cook 3-4 minutes until softening.
- 5. Stir in garlic and cook 30 seconds until fragrant.
- 6. Add bell peppers and cook 4-5 minutes until slightly softened.
- 7. Season with all spices and mix well.
- 8. Reduce heat to medium-low and cook 8-10 minutes until potatoes are tender.
- 9. Stir in butter until melted.
- 10. Top with both cheeses, cover, and let melt 2-3 minutes.
- 11. Garnish with green onions and parsley before serving.
Notes
Store leftovers up to 4 days refrigerated. Reheat with a splash of water to prevent drying.
