Description

A hearty one-pan dinner featuring seasoned ground beef, crispy potatoes, colorful bell peppers, and melted cheese that satisfies the whole family.


Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 2 pounds russet potatoes, diced into ½-inch cubes
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 3 green onions, chopped
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons butter

Instructions

  1. 1. Heat olive oil in a large cast iron skillet over medium-high heat.
  2. 2. Add diced potatoes and cook undisturbed for 4-5 minutes until golden. Stir and cook 3-4 minutes more.
  3. 3. Push potatoes aside and add ground beef. Brown for 5-6 minutes, breaking into pieces.
  4. 4. Add onion and cook 3-4 minutes until softening.
  5. 5. Stir in garlic and cook 30 seconds until fragrant.
  6. 6. Add bell peppers and cook 4-5 minutes until slightly softened.
  7. 7. Season with all spices and mix well.
  8. 8. Reduce heat to medium-low and cook 8-10 minutes until potatoes are tender.
  9. 9. Stir in butter until melted.
  10. 10. Top with both cheeses, cover, and let melt 2-3 minutes.
  11. 11. Garnish with green onions and parsley before serving.

Notes

Store leftovers up to 4 days refrigerated. Reheat with a splash of water to prevent drying.
