Description
Savory-sweet ground beef with Korean flavors served over rice with fresh vegetables. A quick 30-minute weeknight dinner that’s both satisfying and flavorful.

- 1 pound ground beef (80/20)
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes
- 2 green onions, sliced
- 1 tablespoon vegetable oil
- 4 cups cooked white rice
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 2 cups fresh spinach
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Sesame seeds for garnish
Instructions
- 1. Cook rice according to package directions to make 4 cups cooked rice.
- 2. Slice cucumber and toss with rice vinegar and sugar for quick pickle.
- 3. Whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, and red pepper flakes.
- 4. Heat vegetable oil in large skillet over medium-high heat.
- 5. Add ground beef and cook 5-6 minutes until browned, breaking up with spoon.
- 6. Drain excess fat, leaving about 1 tablespoon in pan.
- 7. Pour sauce over beef and simmer 2-3 minutes until thickened.
- 8. Add spinach and stir until wilted, about 1 minute.
- 9. Stir in green onions and cook 30 seconds.
- 10. Serve over rice with pickled cucumber, carrots, and sesame seeds.
Notes
Store beef mixture and rice separately in refrigerator up to 4 days. Reheat beef in microwave or skillet with splash of water if needed.
