- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt, or to taste

- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 cups raw white rice (uncooked)
- 3 cups low-sodium beef broth
- 2 medium zucchini, chopped (about 3 cups)
- 1/2 cup shredded cheddar cheese (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain grease.
- 2. Add chopped onion and cook until softened, about 3-5 minutes.
- 3. Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- 4. Pour in diced tomatoes (with juice) and stir to combine.
- 5. Add uncooked rice and beef broth. Stir well.
- 6. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- 7. Stir in chopped zucchini. Cover again and simmer for another 10-15 minutes, or until rice is tender and liquid is absorbed.
- 8. Remove from heat. Sprinkle with cheddar cheese if using and cover for a few minutes to melt.
- 9. Garnish with parsley if desired and serve hot.
Notes
Allow skillet to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, stirring occasionally, adding a splash of water or broth if needed. Microwave portions heated until hot, stirring halfway through.
