Description

Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional, for a little heat)
  • 1 (15-ounce) can diced tomatoes, undrained
  • 56 ounces fresh baby spinach
  • ½ cup crumbled feta cheese
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: fresh parsley, a squeeze of lemon juice

Instructions

  1. 1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain excess grease.
  2. 2. Add chopped onion and cook until softened, about 5-7 minutes. Stir in minced garlic, oregano, smoked paprika, and red pepper flakes. Cook for 1 minute until fragrant.
  3. 3. Pour in diced tomatoes (undrained). Stir, scrape up browned bits, and bring to a simmer. Reduce heat to medium-low and cook for 10 minutes.
  4. 4. Add baby spinach in handfuls, stirring until wilted.
  5. 5. Stir in crumbled feta cheese. Cook for 2-3 minutes until warmed through. Season with salt and pepper to taste.
  6. 6. Remove from heat and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a skillet over medium-low heat or in the microwave.
