- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 4–6 pieces of naan bread or other flatbread
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup thinly sliced red onion
- 1/2 cup chopped cucumber
- 1/4 cup chopped fresh parsley
- For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1/4 cup grated cucumber (squeeze out excess water)
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill (optional)
- Salt and freshly ground black pepper to taste
Instructions
- 1. Marinate the Chicken: In a medium bowl, combine the chicken pieces with 1 tablespoon of the olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper. Toss to coat thoroughly. Let it marinate for at least 15-30 minutes at room temperature, or up to 4 hours in the refrigerator.
- 2. Prepare the Tzatziki Sauce: While the chicken marinates, prepare the tzatziki. In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill (if using). Season with salt and pepper to taste. Stir everything together until well combined. Let the tzatziki sit in the refrigerator for at least 15-20 minutes.
- 3. Cook the Chicken: Heat the remaining 1 tablespoon of olive oil in a large skillet or on a grill pan over medium-high heat. Add the marinated chicken in a single layer. Cook for 5-7 minutes per side, or until the chicken is cooked through and nicely browned.
- 4. Warm the Flatbread: Lightly toast or warm the flatbread in a dry skillet, toaster oven, or oven until pliable and slightly warmed.
- 5. Assemble the Flatbreads: Lay out the warmed flatbreads. Spread a generous layer of tzatziki sauce over each. Top with the cooked chicken, feta cheese, Kalamata olives, red onion, and cucumber. Sprinkle with fresh parsley.
- 6. Serve Immediately: Cut the flatbreads into wedges or serve whole. Enjoy while warm.
Notes
Store leftover components (chicken, tzatziki) separately in airtight containers in the refrigerator for 3-4 days. Reheat flatbreads gently in the oven or skillet. Cooked chicken can be reheated in a skillet or microwave. Avoid microwaving flatbreads.
