- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4–6 cloves garlic, minced (about 2 tablespoons)
- 1/2 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper to taste
- 1/4 cup chicken broth (low sodium is fine)
- 1 tablespoon fresh parsley, chopped (for garnish)
- Optional: Red pepper flakes for a touch of heat
Instructions
- 1. Prepare the Chicken: Pound chicken breasts to an even thickness of about 1/2 inch. Cut chicken into 1-inch cubes. Pat dry and season generously with salt and pepper.
- 2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side until golden brown. Remove chicken and set aside.
- 3. Make the Garlic Butter Sauce: Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant but not browned. Stir in Italian seasoning and optional red pepper flakes.
- 4. Deglaze and Simmer: Pour in chicken broth, scraping up brown bits from the bottom of the skillet. Simmer for 1-2 minutes until slightly reduced.
- 5. Combine and Finish: Return chicken to the skillet. Toss to coat. Cook for 3-5 minutes until chicken is cooked through (165°F/74°C) and sauce has slightly thickened.
- 6. Serve: Remove from heat, garnish with fresh parsley, and adjust seasoning if needed.
Notes
Store cooled chicken in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop with a splash of broth or butter for best results.
