  • Salt and freshly ground black pepper to taste
  • 1/4 cup chicken broth (low sodium is fine)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: Red pepper flakes for a touch of heat

Instructions

  1. 1. Prepare the Chicken: Pound chicken breasts to an even thickness of about 1/2 inch. Cut chicken into 1-inch cubes. Pat dry and season generously with salt and pepper.
  2. 2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side until golden brown. Remove chicken and set aside.
  3. 3. Make the Garlic Butter Sauce: Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant but not browned. Stir in Italian seasoning and optional red pepper flakes.
  4. 4. Deglaze and Simmer: Pour in chicken broth, scraping up brown bits from the bottom of the skillet. Simmer for 1-2 minutes until slightly reduced.
  5. 5. Combine and Finish: Return chicken to the skillet. Toss to coat. Cook for 3-5 minutes until chicken is cooked through (165°F/74°C) and sauce has slightly thickened.
  6. 6. Serve: Remove from heat, garnish with fresh parsley, and adjust seasoning if needed.
