Description

A comforting and flavorful side dish that brings together the savory essence of French onion soup with hearty potatoes, topped with melted Gruyère cheese.

  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 cup beef broth (or vegetable broth for a vegetarian option)
  • 1/4 cup dry white wine (optional, but adds depth)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup shredded Gruyère cheese (or a mix of Gruyère and mozzarella)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a large oven-safe skillet or Dutch oven, melt the butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 20-30 minutes, or until they are deeply caramelized and golden brown.
  3. 3. Add the minced garlic and thyme to the skillet. Cook for another minute until fragrant.
  4. 4. Add the cubed Yukon Gold potatoes to the skillet with the caramelized onions. Stir to coat.
  5. 5. Pour in the beef broth and white wine (if using). Stir well to combine.
  6. 6. Season generously with salt and freshly ground black pepper.
  7. 7. Bring the mixture to a simmer, then cover the skillet or Dutch oven and transfer to the oven.
  8. 8. Bake for 30-40 minutes, or until the potatoes are tender when pierced with a fork.
  9. 9. Remove the skillet from the oven. Sprinkle the shredded Gruyère cheese evenly over the top.
  10. 10. Return the skillet to the oven, uncovered, and bake for another 5-10 minutes, or until the cheese is melted and bubbly and golden brown.
  11. 11. Garnish with fresh chopped parsley before serving.

Notes

Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) for best results.
