Description

Whip up these incredibly easy and flavorful crispy Parmesan garlic roasted baby potatoes. They’re a simple yet satisfying side dish that’s perfect for weeknight dinners or holiday gatherings, thanks to their golden, crispy exterior and tender, fluffy interior.

  • 2 pounds baby potatoes (such as Yukon Gold, red, or a mix), scrubbed clean
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (freshly grated is best)
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. 2. If your baby potatoes are larger than 1.5 inches in diameter, cut them in half or quarters. Smaller potatoes can be left whole. Pat them completely dry with a clean towel.
  3. 3. In a large bowl, combine the dried baby potatoes. Drizzle with olive oil. Add minced garlic, grated Parmesan cheese, dried Italian seasoning, salt, and black pepper. Toss thoroughly to coat each potato piece.
  4. 4. Spread the coated potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan. Use a second sheet if necessary.
  5. 5. Roast for 35-45 minutes, or until tender when pierced with a fork and golden brown with crispy edges. Flip the potatoes halfway through the cooking time (around 20 minutes).
  6. 6. Remove from the oven. Garnish with fresh parsley if desired. Serve warm.

Notes

Allow roasted potatoes to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat in a single layer on a baking sheet in a hot oven (375-400°F or 190-200°C) for 5-10 minutes until heated through and crispy.
